We chose Highland cattle because of their excellent mothering skills, hardiness, gentle disposition and great tasting meat. Highland beef has its own unique flavor and we believe it is the best tasting beef that we can grow and market.
The Highland breed is well suited for New York weather. Their double coat of hair keeps them warm in the winter and they do not need to have as much back fat as shorter coated animals. This results in less waste during processing. The meat is flavorful, tender and well marbled. All new customers are given copies of recipes that I have tried with our Highland beef.
