OUR BEEF
Our cattle graze on our own grass and clover pastures during the summer. We utilize rotational grazing to get the maximum use of each pasture and prevent overgrazing. We also use fly predators as a natural means of fly control during the summer season. During the winter months our cattle eat our own grass hay and locally purchased grain and minerals. We regularly vaccinate and worm our animals to keep them healthy and utilize good animal husbandry practices to grow a healthy and nutritious product for our consumers. We do not utilize growth hormones or antibiotics as growth enhancers.
Our animals are processed locally from July to October.

We sell beef by the quarter or larger quantities, we do not sell beef by the individual cuts of beef. Our beef is dry aged for 14 days to allow for maximum flavor and tenderness. all beef is vacuumed packaged. standard cuts include the following:
- lean ground beef
- stew meat
- brisket or corned beef
- chuck and arm roast
- ribs
- rib eye steaks or three rib standing rib roast
- t bone steaks
- sirloin tip steaks or sirloin tip roast
- rump roast
- sirloin bone in steak
- round steaks or round roast
- soup bones
- optional cuts include cube steak, flank steak, heart, liver or tongue
Every animal is different and quarters run between 85-120 lbs. We take reservations for beef starting January 1st and require a $100 deposit for quarters and $1000 deposit for an entire cow. Each quarter is sold as a mixed quarter meaning it contains cuts from the front and back quarter. Total weight of the quarter is determined at the time of pick up.
